Buffalo Chicken Salad – Low Carb Keto Healthy Meal Prep Idea


Welcome all! Papa G here. Today I present
all the flavors you love in spicy buffalo wings, brought to you in a simple
low carb, easy to make, chicken salad recipe. My Buffalo Chicken Salad . Let’s get started. Like I do with most of my recipes that call for precooked
chicken, I like the easy and not expensive route of using a precooked,
rotisserie chicken from my local grocer. You can easily get 16 ounces of white
and dark meat off of one bird. Also, using both white and dark meat adds to the
flavor of this recipe. Once our chicken is shredded, we’ll need two – 6 to 7 inch
stalks of celery. You want to be sure that it’s finely chopped. Now that our prep work is done, we’ll mix
our recipe adding the chicken to a large bowl. Add our diced celery; some of my
ranch dressing; a buffalo wing sauce. You don’t want to use just a standard hot
sauce here. A wing sauce will be just a little
thicker and offer a better flavor profile. I’m using Frank’s for this recipe,
but feel free to use your favorite. Now add some salt; ground black pepper; and a
generous amount of garlic powder. Give a good stir to combine and let rest in the
refrigerator for at least an hour. You can enjoy as a sandwich with my low-carb
bread; a wrap with your favorite low-carb tortilla; or as a dip or hors d’oeuvre.
