Healthier Holiday Bark – 3 Ways!  – Mind Over Munch

Oh my gosh! Santa sent ME a letter!!! “Dear Alyssia, Thank you SO much for the peanut butter blossoms last Christmas. You always make the best holiday treats! This year, I have a request. I love holiday
bark, but it’s always SO unhealthy! Could you make a healthy holiday bark for
me this year? I’d really appreciate it. And, don’t forget,
I’m on a new diet! Ho ho ho!” I can make healthy holiday bark! But, wait—does Santa eat low fat? Or low carb?? Or did he go vegan??? There’s no time to write him back and ask… I know! I’ll just make all three! Hey munchies! We’re cookin’ up
treats all month long, and today I’m giving you HEALTHIER holiday
bark, 3 ways! We’ve got low fat, low carb and raw vegan, so there’s different options that might
suit your different lifestyles! First up: strawberries
and cream! In a bowl, combine Greek yogurt, maple syrup,
vanilla extract, a squeeze of lemon juice and a pinch of salt. Pour that onto a tray lined with parchment, and use an offset spatula to spread it out,
¼ of an inch thick or less. Top it off with freeze dried strawberries, and I also like to add some toasted and chopped
pecans since it is the season where nuts are delicious
with everything, after all. I guess that’s actually every season… Anyway, freeze that tray for 4-6 hours, and
when you remove it, you can use a knife to cut a piece off and
then break it into pieces! Because the strawberries are freeze dried,
they don’t get mushy when eating the bark so it’s a great texture, and the yogurt
keeps this option lower in fat! And I love the white and red colors together
for the holidays! Next we’ve got a chocolate, almond & sea
salt bark. How about a thumbs up if you’re enjoying
those screenshottable recipe cards? In a double boiler, I melt down cocoa or cacao
butter. Then I stir in unsweetened cocoa powder, liquid
sweetener of choice— make sure it is a sugar-free variety that
doesn’t affect blood sugar if you want this to be low carb, I will link
the fiber syrup that I used in the description— and a pinch of salt. Once mixed, remove from
the heat and stir in vanilla extract. Pour onto a pan, spread, and then add sliced
almonds and a sprinkle of salt. It’s ready to freeze! When you break it up, you’ll have a chocolate
bark that looks impressive, but you saw how easy it was to make! And chocolate and salt are just one of my

can be notified of new videos every week. The last bark of the day is a cranberry pistachio— and it happens to be raw and vegan! Start with melted coconut oil. Stir in cocoa or cacao powder and maple syrup. Pour the mixture into the middle of your tray
and let it spread. This one is thinner, so you may not need to
spread it at all. Sprinkle on some chopped pistachios and dried cranberries, freeze until firm, and then break it into
pieces! Cranberries and pistachios not only taste
delicious together, but the green and red are so festive! Keep in mind, all of these barks will melt
at room temperature, so store them in the fridge or freezer. This last one is also the base of my peppermint

  7. The raw vegan one isn't technically raw because of the maple syrup and how it's processed. Common misconception not a lot of people know about, but I'm sure you can easily substitute it with something else like raw agave. Nevertheless, great video as always.

  17. YUMMY!! I just wish I knew where to find freeze dried strawberries around here, as Strawberries & Cream is one of my very favourite things. In fact, might have to keep this one in mind for Wimbledon Championship Weekend come July. 😊

I've only missed two years since 1993, one thanks to knee surgery & the other time? You guessed it!! It was the same date as William & Kate's Wedding in 2011 & you couldn't find a room anywhere in Toronto that weekend thanks to all the other Weddings taking place that day by people wanting the same Wedding date as the Cambridges. 🙄🙄🙄

    So I can start making those plans at least. Even so…I WANNA BE WATCHING THE LAST JEDI RIGHT NOW!!
