How to Make Creamy Cheddar Parmesan Polenta

Today on The Stay At Home Chef I’m
showing you how to make Creamy Cheddar Parmesan Polenta This is a simple side
dish that’s really easy to make. We’re gonna head on over to the stove and get
started. If you can’t find coarse ground you can use regular old yellow cornmeal
as well. First you’ll want to bring 6 cups of water to a boil. We’re going to
salt the water with 1 teaspoon of salt Just like when you’re making rice, the
proportion of water to cornmeal matters So make sure you measure out that 6
cups of water. Once it comes to a boil you’ll pour it in 1 and 3/4 cup of that
cornmeal. Whisk it in and reduce the heat to low so that this can simmer.
You want to whisk it so that you break up any big clumps. We’re gonna let this
cook uncovered for 15 to 20 minutes While the polenta is cooking you’ll want
to grate 1 cup of cheddar cheese and I’m using white cheddar today but yellow
cheddar also works and grate 1/2 a cup of Parmesan cheese. This polenta makes a delicious side dish by itself I love to serve it up with braised beef short ribs
or you can top it with some sauteed mushrooms for a complete vegetarian meal. While it’s simmering it’ll start thickening up and you just want to give
it an occasional little whisk Now once the polenta is done cooking
you’ll want to remove it from the heat and we’re gonna add in 5 tablespoons of
salted butter and whisk this in until it’s fully melted. Once the butter is
melted you can start adding in your cheeses and I kind of like to add them a
little bit at a time so that it doesn’t clump up. You’ll mix this in until the
cheese is all melted as well. Look at that cheesy deliciousness. Last add in 1
cup of milk. Gently stir this in and then you are ready to eat! Thanks for watching! You can find the

  4. I've been watching your channel for a while and as I recognize recipes we do here in Romania as well, I am fascinated to see you use at least four times the quantity of butter we usually use for the same dish. Is this a personal touch or is it something common in the US?

  5. In my country we use corn meal to make a dessert. You boil it in coconut milk until it thickens, add a tin of condensed milk stirring continuously until very thick, then pour into a dish. Place in the fridge,when it's cooled, cut into squares and serve.

  6. My parents would make polenta with a Styrofoam texture.. I wouldn't touch it!! So I always hated polenta. This I got try though!

  7. This looks so good. I’m Haitian we eat this for breakfast and you can add spinach to it. I serve it with avocado on the side.
