hey guys thanks for watching this video today we’re going to share with you two low carb delicious dessert type recipes I found both of these on Pinterest so if you want to follow me over there I’ll leave my information in the description box as well as on the screen so please follow me on Pinterest these recipes are very delicious one is a pancake recipe that I’ve made all already one time and oh my gosh you can’t taste the difference really if it’s flour or almond flour so this recipe is perfect for Saturday mornings with the family and I also am going to try for the first time a very easy chocolaty dessert that is lower carb so follow me along and try to make these recipes at home that way you guys can eat a little bit healthier and enjoy some desserts all at the same time if you like to do the second recipe tomorrow for a breakfast this video is a collaboration with Sierra over at the Robinson home her channel is more vlog style videos they added a fourth member to their family let’s get baking some really low carb delicious recipes [Music] [Applause] [Music] [Applause] [Music] our first recipe is going to be a dark chocolate sea salt peanut cluster however these are cashews I prefer cashews because they’re softer anyway and I just didn’t have any peanuts so I’m going to actually cut this recipe in half it calls for a cup of peanuts four ounces of dark chocolate chips some sea salt to sprinkle it and some liquid stevia so as you can see I’m only going to use the packet of stevia I’m going to put it inside the melted chocolate and so I only go to half the recipe so instead of four ounces of chocolate I’m going to use two ounces and instead of a cup of peanuts I’m going to use a half a cup while not peanuts but cashews and of course you need a mini muffin tin so that each portion is equal and that it forms nicely in that area so let’s get to making these delicious chocolate clusters [Music] [Applause] to start off you’re going to pour your chocolate chips into a microwave-safe Bowl and you’re going to put in the microwave for 30 second intervals I only had to do this twice and the chocolate melted very nicely now keep in mind I only use two ounces instead of four so I only how to do it twice maybe it’s like four times for like four ounces but anyway it got nice and creamy and hot just the right consistency for the cashews to go in and cover it all up once the chocolates all melted then you’re going to add the stevia packets to it just to kind of give it a little extra sweetness [Music] [Applause] [Music] [Applause] [Music] the recipe did suggest using muffin tin liners I thought I had some and when I went to check I regretfully did not so at the end of this recipe you’ll see me kind of struggling to get these out it wasn’t too bad but you know they broke or whatever so for entertaining purposes use the muffin tin liners because the chocolate dessert clusters will stay together better so just keep that in mind but if you don’t have them it doesn’t like not make the recipe possible so I didn’t use them and the chocolate still came out it’s just that it broke a few pieces at the end all you’re gonna do is garnish it with some kosher sea salt this was a funny purchase because I bought a normal-sized container well the Walmart grocery pickup order they didn’t have it so they gave me like this jumbo box so now I have sea salt for probably ten years [Music] [Music] so I put the clusters into the freezer and they’re only gonna be freezing for probably like 15 minutes so when I get them out I’ll show you how I pop them out and how I put them in a container and put them in the freezer back again until we’re ready to have them with our coffee tonight the cashew clusters are now frozen so let’s go ahead and get those out of the freezer and enjoy them for tonight’s dessert [Music] [Music] [Music] alright guys here they are I’m gonna put them back in the freezer until tonight when we have some coffee I’ve already tasted a few little pieces we’re very delicious that salt just makes all the difference and breaks up the sweetness so I’m looking forward to having this with a good cup of coffee [Music] all right guys I’m gonna actually go ahead and make the pancake mix for tomorrow morning so the recipe I’m going to use the recipe as if I’m not going to make any changes so let’s go ahead and make the batter that way tomorrow morning all I have to worry about is heating up a skillet and using a nonstick hittin spray and just cooking up some pancakes so let’s go ahead and make it now you’re gonna start by mixing all the wet ingredients first so you’re going to take 3 eggs 2 tablespoons of vanilla a half a cup of whole milk and I use just 2 packets of stevia and 1/4 teaspoon of kosher salt and you’re gonna just whisk that all together and so it’s very very well combined I actually whisk a little longer than I should just because I know that if I whisk more the air will incorporate into it and the eggs will get fluffier and the pancakes will get fluffier so that’s what you start with first [Music] after your arm gets pretty tired from whisking you’re going to add the almond flour now you’re supposed to use two cups don’t add it all in at the same time you’re supposed to add it like one cup at a time but gradual and just make sure all the almond flour you know breaks up and absorbs the liquid because almond flour of course is not like regular flour so it’s a little different to work with [Music] and the final step of making your batter is just adding the baking soda that is just gonna be a one teaspoon amount and this is like the secret ingredient to you know making it more fluffy so don’t forget that [Music] alright the batter is made I’m going for some cleaner wrap over top of it and I’ll put it in a refrigerator for tomorrow morning and we will have some delicious almond flour pancake [Music] so the griddle that I’m using was actually a gift I don’t even know how many years ago I don’t use it like super often I literally only use it to make pancakes especially now that we’re a family of four and my toddler is eating pancakes fairly regularly and now my one-year-old is kind of like getting in the habit of eating pancakes I am using it a lot more now so anyway this griddle is perfect because you’re gonna probably end up making eight nine pancakes with this recipe and it would get too long and drawn-out if you did it in a pan so if you don’t have a griddle like this and you have a fairly large family invest in one it will save you so much time and effort [Music] so what you are about to see is something that never happened and that is not flipping a pancake correctly y’all even know I guess it was because I was filming but I’ve never done this like in the most recent years I’ve never messed up a pancake flip but you guys get to see my flop [Music] [Applause] [Music] [Applause] [Music] [Music] so what I’m doing is adding you know cold butter to the griddle that way I’m not wasting butter and also the butter just doesn’t burn and you know smoke up the whole house so this is a really neat trick just to save you some time and some butter [Music] when all those pancakes are done I like to top them off with some blueberries and some sugar-free syrup that way it tastes so so much more delicious and honestly guys you’re not gonna know that the difference that this is almond flour and not the regular flour so you guys if you are like watching what you eat but you really want to have like a hearty breakfast and something special with the family this is
